General Objective
To promote collaborative work to test/validate different uses of ancient wheat varieties from Álava, cultivated in resilient agricultural systems and with market interest through short supply chains.
Specific Objectives
- To recover biodiversity in the cereal sector by directing the production of pure seeds of heirloom varieties of Álava wheat.
- To develop specific cultivation protocols for the varieties considered in organic farming.
- To increase the profitability of small and medium-sized agricultural businesses, processors, and hospitality establishments focused on niche, high-quality production, operating within an organic farming context.
