Consumers are becoming more and more aware of the relationship between food, health and the positive/negative impact of fat (oils, vegetable or animal fat) depending on the nature and amount consumed. This is why the nutritional aspects have an ever greater influence on the decision to purchase certain products; nevertheless, novelty is an important factor in the purchase decision since many consumers are attracted by this.

The consumption of products of animal origin (particularly cured meats and dairy products) is becoming more controversial for different reasons, including the harmful effect on people’s health, affecting in the last instance the sustainability of many farms and cattle-farming activity. Regardless of the fact this effect is conditioned by other factors (component of the rest of the food consumed, physical exercise, etc.), it does seem that nutritionists advise against consumption of an excessive amount and certain compositions (excessive saturated fats, salt, etc.).
